Dating back to the 1850’s this dish has been a staple for the cattle drivers in the west to feeding big families today, this good ole dish has been and still is a real favourite.
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, crushed
- 500g beef mince
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1–2 tsp ground chipotle powder
- 400g can diced tomatoes
- 1 tbsp tomato paste
- 400g can red kidney beans, drained
- 2–3 tbsp Cobra Chilli Garlic Habanero Chilli Sauce
- Salt & pepper
Directions
- Heat the oil in a large pot over medium-high. Cook the onion and garlic until softened, about 3 minutes.
- Add the mince and brown well, breaking it up as it cooks.
- Stir in the cumin, smoked paprika and chipotle powder and cook for 1 minute, until fragrant.
- Tip in the tomatoes, tomato paste, kidney beans and Cobra Chilli Garlic Habanero sauce. Stir to combine.
- Simmer uncovered for 20–25 minutes, until rich and thickened. Season to taste.
- Serve over rice, loaded onto nachos, or in bowls with sour cream, grated cheese and coriander.
