Sausage and Capsicum Spice Dish

For a quick dinner in just 30 minutes try our Italian Sausage and Capsicum recipe.  Flavourful chunks of sausages with tomatoes, garlic, herbs and spices, makes a great weeknight dinner.  Try it in warm hotdog buns with some melted cheese for something different.

Ingredients

  • 500 – 550gm of Italian Sausages (Avail Coles, Woolies or good butcher)
  • 2 tbs oil
  • 1 green capsicum
  • 1 red capsicum
  • 2 brown onions
  • 2 cloves garlic minced
  • 1 tbs tomato paste
  • 1 can diced tomatoes
  • 1/4 cup Cobra Chilli Garlic Habanero Sauce
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil leaves
  • Salt and pepper to taste

Directions

  1. Add oil to pan and heat over a medium heat.
  2. Add sausages and cook until browned on all sides.
  3. Remove from pan and set aside (no need to cook right through yet)
  4. Add sliced onions and capsicums to left-over oil in pan and cook over medium heat until softened.
  5. Add garlic and cook for 1 minute
  6. Slice sausages into approx 2.5cm pieces and return to the pan with the other ingredients and stir it all together.
  7. Cook for 5 to 10 minutes until sausages are cooked through and the sauce has started to thicken.

TIP:  Great served on warm hot dog buns with some melted cheese.
