Black Truffle Mac and Cheese

A luxurious baked pasta with rich creaminess and sublte earthy flavour with a chilli hint.  Get Fancy!




  • 250gms Penne Pasta or Shells
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 small onion finely chopped
  • 2 tsp minced or finely chopped garlic
  • 4 tbsp plain flour
  • 3 cups milk (full fat)
  • 1,1/2 cups grated mozzarella cheese
  • 1,1/2 cups grated gruyere, provolone or gouda cheese
  • salt and pepper to season
  • 5 tbsp Cobra Chilli Truffle Sauce


  • 1/2 cup panko crumbs
  • 1/4 cup grated mozzarella cheese
  • 1/4 cup grated gruyere, provolone or gouda cheese
  • 1 tbsp finely chopped fresh parsley


  1. First, preheat your oven to 200c
  2. Bring a large pot of water to a boil then add your pasta and cook them 2 minutes less than package directions, drain and set aside
  3. Heat up a large skillet on medium-high heat
  4. Add olive oil and butter
  5. Add chopped onion and cook for a minute, then add garlic, stir and cook for a minute
  6. Add  flour and stir in and cook for a minute.
  7. Using a whisk slowly add about 1 cup of milk while whisking. Once the sauce is thick and lump free add another 1-1.5 cups of milk and whisk until the sauce is smooth.
  8. It will still look a bit lumpy because of the onion and garlic
  9. Season with salt and pepper
  10. Add grated cheese and stir well until the cheese has melted into the sauce
  11. Add the truffle sauce, stir and give it a quick taste. add more if preferred
  12. Add pasta to the cheese sauce. Fold in the pasta until all pasta is coated
  13. Pour into a greased baking dish and flatten the top
  14. Cover the top with breadcrumbs, extra cheese and parsley
  15. Bake the mac and cheese in your pre-heated oven for approx 20-25mins until the top is light golden brown
