Madras Meat Curry 
 
3 tbsp oil, 200g finely chopped onion, 1 tbsp garlic paste, 1 tbsp ginger paste, 3 finely chopped green chillies, 3 level tbsp (35g) Madras Meat Curry Masala, 1kg lamb pieces, 2 cups of water or coconut cream, salt to taste, for garnish: 1 tbsp julienne ginger, 2 tbsp finely chopped coriander
 
Method - Heat the oil in a pan, add and fry until golden the onion, garlic, ginger and green chillies. Add the Madras Meat Curry Masala, and fry gently on low heat until aromatic. Add the lamb pieces and seal on high heat stirring well. Add the liquid (water or coconut milk) and bring to the boil, turn down to simmer and cover. Cook until the meat is tender and the liquid is reduced, salt to taste. Serve hot with rice and garnish with the julienne ginger and fresh coriander.
For best results this curry can be used with any meat and potatoes or sweet potato if desired.
